The illustrious career of EMME’s culinary director Giovanni Moncada has seen him travel the kitchens of the world before coming back to his Roman roots to oversee the menu and kitchen of EMME. With a philosophy that focuses on culture, tradition and the flow of nature, his respect for primary ingredients and dedication to quality are passed down to a dynamic team to execute a modern menu which is still strongly rooted in Italian tradition.
